The ibs.GRANADA inaugurates its Science Week with an activity on food chemistry
This first Monday of November, the Granada Biohealth Research Institute has inaugurated its 2023 Science Week with the activity titled “The hidden face of food: a chemical vision”, taught by Daniel Hinojosa Nogueira, researcher of the group E07-RESEARCH IN ENVIRONMENTAL HEALTH AND CHILDREN from ibs.GRANADA and Adriana Delgado Osorio, predoctoral researcher at the Department of Nutrition and Bromatology of the University of Granada.
This activity was carried out with 2nd baccalaureate students from IES Regina Mundi, it was an informative talk about how the chemistry of food is capable of influencing different characteristics of food, such as color, acidity or flavor. After the theoretical explanation, a small experiment was carried out where it was shown how red cabbage can be a pH indicator or how powerful a sweetener it can be.
